Chia seeds are used in a lot of sweet recipe when it comes to vegetarian or vegan cooking. It has good nutritive value but more than that, it can replace the eggs in cakes! Magic.
You can also make it a breakfast or snack simply by mixing it with some milk of your choice and let it rest in the fridge for a few hours. Come morning you get a deliciously gooey pudding.
Add fruits if you feel like it, sweeten it or not, add vanilla… Lots of combinations possible! Use seasonal ingredients and enjoy 🙂
Vegan chia pudding (serves 2) :
- 3 tbsp chia seeds
- 1 cup milk
- 1 tsp vanilla extract (optional)
- 1 tbsp maple syrup (optional)
Mix everything into a bowl. Let it cool for a few minutes in the fridge.
Take it out, mix well to avoid lumps.
Put back in the fridge for at least 5-6 hours.
