3 ingredients sweet potato gnocchis (vegan)

A healthy 3 ingredients recipe, easy and delicious. These sweet potato gnocchis are delicious with poultry and a cream sauce.

I made this recipe vegan, only sweet potato, flour and salt. Rolling and shaping takes a little bit to get right and beautiful but you can find plenty of videos on YouTube.

You can season the dough with fresh herbes, spices or what you want really! Boil it, pan fry it in butter and add a delicious sauce. Dinner ready in NO time.

3 ingredients sweet potato gnocchis (serves 2) :

  • 1 large sweet potato
  • 150-200g flour
  • 1 tsp salt

Preheat the oven at 180°C/360°F.

Poke holes in the potato and bake it for approximately 45 minutes or until fork tender.

Let it cool, peel it. Puree the flesh with a fork in a bowl.

Pour flour on a working surface, add salt, make a well and add the puree in the middle. Knead and add flour as needed. The dough must not be sticky anymore.

Cut it in 2, then 4 and 8. Roll the dough into snake shape and cut 3-4cm pieces.

Boil in water until it floats.

You can then add the seasoning or sauce of your choice.
