Lentils and sausages stew

Temps are not very low for an October, quite the contrary actually but I am craving cozy and comfort food anyway so that is what I am making! Here, I made a delicious lentils and sausages stew, nothing simpler but it’s flavorful and everyone licks their plates.

I added a little bit of thyme to give it even more flavors, you could also throw a bay leaf in there. And if you fancy smoked sausages, you can definitely use that too. I did in the past and it was as delicious! Wholegrain mustard is a must for me, serve some on the side and enjoy with the lentils… Typical french I know.

Lentils and sausages stew (serves 4) :

  • 4 sausages (I used Toulouse sausages)
  • 200g lentils
  • 1 onion
  • 2 sprigs of fresh thyme (or 1 tbsp dried thyme)
  • Salt and pepper

Rinse the lentils under cold water.

Poke a few holes in the sausages to let the grease come through.

In a stewpot, fry the sausages until golden brown.

Take the sausages out, set aside. Add minced onion to the pot, fry it in the sausages grease.

Add the lentils and 3 times their volume in water (so for example if you put 2 cups of lentils, you put 6 cups of water).

Add the thyme, season well and stir.

Cut the sausages in 3 pieces so it will absorb all the flavors.

Cover with a lid and let it simmer for 20-30 minutes.

Taste and season some more if needed.

Serve with some wholegrain mustard on the side!
