Chicken with apples and cider

Fall vibes, am I right? Apples, cider, chicken… You just can’t do better than that for a fall themed dinner. Let’s dig in!

So first of all, I love drinking apple cider. And I understand from what I read online that what you find in US store and called cider ressembles more a soda than an alcohol. This cider I’m talking about is real french cider, not the soda like one. It might be too sweet if you’d use that. The sauce thickens with the cornstarch and is even more beautiful and tastier with the whole grain mustards. I loved it!

Chicken with apples and cider (serves 6) :

  • 6 chicken thighs
  • 35cl apple cider
  • 1 onion
  • 1 big apple
  • 1 tbsp cornstarch
  • 2 tbsp whole grain mustard
  • 1 sprig of thyme
  • Salt and pepper

Brown the chicken thighs in a pot with a little bit of oil until golden.

Set the chicken pieces aside. Keep about 2 tbsp chicken fat and get rid of the excess.

Finely chop the onion. Sautee it in the chicken fat.

Sprinkle with flour, mix well.

Add the cider and stir. Add the mustard, thyme and season to taste.

Put the chicken back into the pot. Cover with a lid and cook for 30-45 minutes.

Peel and chop the apples, add it to the pot. Cook 5 more minutes.

Serve warm over rice or potatoes.
