Breaded salmon with avocado spread and lemon jelly

I recently took a cooking course at the Paul Bocuse institut that was based on... drum rolls... salmon. We realised this recipe in glasses but I thought it wasn't really easy to eat so I made it a lunch with a few twists and turns.

Goat cheese, preserved lemon & mint dip

I love dips of all sorts! And because I still had some preserved lemons in my fridge, I thought it might taste good with goat cheese and mint in a dip. It was BRILLIANT.

Rose and cardamom rice pudding

This is inspired by a delicious Ottolenghi recipe in his Jerusalem book that I love. A very oriental recipe, not acquainted to fit our occidental tastebuds, with punchy flavors.
