Honey duck filet with asparagus

During the week, I can’t spend hours preparing dinners, so it’s quick and light but still very yummy. That’s important because after a long day, you are always happy to have a moment to relax, eating good food while having interesting conversations with your husband.

Duck filet is quite expensive but how versatile. Marinated, roasted, pan-fried… and so on. In this recipe, it needs to marinate so it’s better if you can prepare it the night before but if you forgot or don’t have time, 30 minutes in the fridge will be ok.

Honey duck filet with asparagus (serve 2) :

  • 1 or 2 duck filets
  • 1 tbsp honey
  • 2 tsp lemon juice
  • 2 tsp soy sauce
  • 1 sprig thyme
  • Pepper
  • 400g of asparagus
  • 2 vines of cherry tomatoes (optional)

Combine in an oven-safe plate : honey, lemon juice, thyme, soy sauce. Put the duck filet in the plate and coat it well with the marinade. Let it sit in the fridge to marinate (from 30 minutes to 24 heures).

Preheat your oven at 210°C (410°F). Take the duck filet out of the fridge and put it in the oven for 20-30 minutes.

Meanwhile, prepare your asparagus. Cut the lower part and run under cold water. Be careful not to break it.

Put a little bit of olive oil in a frying pan. Fry the asparagus for 3 minutes and cover with a lid, let it cook 3 more minutes. The asparagus will be crunchy.

For the tomatoes on the vine, it’s really simple. Put a little bit of olive oil with a little bit of butter in a pan, when it’s hot, put the tomatoes. Put a lid on it and wait 5 minutes, done !
