Crunchy potatoes

We had the opportunity to stay in a very cute appartement last week while our friends, the owners, were in Iceland (how lucky are they). There is a little garden there, a cat… AND A BBQ. An electric one, but still. We were really excited by the idea of grilling. Guess what we ate during ten days? You’re right, bbqed stuff. Almost exclusively.

What would be a good grilling session without potatoes? Less exciting… So, I’m sharing with you my favorite crunchy potatoes recipe, all in a frying pan.

As usual, It is quick and easy. You don’t want to stay 4 hours in the kitchen while your friends are sipping a glass of fresh wine outside, right ?

Crunchy potatoes (serves 4) :

  • 800g to 1kg potatoes
  • 4 garlic cloves
  • Oil
  • Salt & pepper
  • 1 tbsp Herbes de Provence

Cut the potasses in the shape and size that you like, but make sure they’re quite equal. Wash and pat it dry with a kitchen towel. Put a pan with a glug of olive oil in it on the stove, I used sunflower oil but use whatever you have.

Put the potatoes in the pan and mix frequently. Let it 15 to 20 minutes or until it is nearly cooked. Mince the garlic gloves. Season with salt and pepper, then add the garlic.

Continue to stir, let it on the stove for a few minutes.

Add your herbes de Provence, mix. Done !
