Homemade ratatouille

I’ve seen thing in really big this time… As you will see, this recipe serves 6 people while we are only two. So yes, we ate it during 3 days but it was sooo good that I didn’t really care. My husband was a little less excited than I was, considering the fact that he hates anything with aubergines/eggplants in it.

It takes a bit of time to do it but it really worths the time. Store bought ratatouille are so boring compared to this !

We ate it with rice, pasta or potatoes, the three are really good. You choose what you prefer.

Home made ratatouille (serves 6) :

  • 4 courgettes/zucchinis
  • 1 aubergine/eggplant
  • 3 tomatoes
  • 2 onions
  • 1 pepper (I used a green one)
  • 3 garlic cloves
  • Olive oil
  • Thyme and bay leaves
  • Salt & pepper

Wash all your vegetables. Cut your courgettes and eggplant in cubes and put them in a bowl with salt for 10 minutes, they will release their water. Dry them well after that.

Peel and mince your onions. Seed your bell pepper and cut into little cubes. Put your tomatoes for a couple of seconds to skin them easily. Seed them and keep the flesh.
Peel and minced very finely your garlic.

Put olive oil in a big frying pan over medium high heat. Your onions go in with a pinch of salt. Add your eggplant and bell pepper. Let it cook for 5 minutes then add your courgettes and season with salt and pepper again. Then add your garlic, thym, bay leaves and tomatoes. A little bit more of salt and pepper. Cover with a lid and let it cook for at least 30 minutes.
