Vanilla rice pudding

I had a little bit of time on Monday afternoon and I wanted to make a really quick and simple dessert. I had some round grain rice in my pantry for a while so I thought I could use that.

This recipe is simple, like really, nothing too complicated. The most annoying part is probably stirring it all the way through but nothing you can’t do.

I put vanilla seeds in mine but you could also use citrus zest or cinnamon to flavour it. Depends on your test. I didn’t put that much sugar in mine because I like to put a little bit of honey before eating it or some jam

Vanilla rice pudding (serves 5/6) :

  • 200g round grain rice
  • 1l milk
  • 1 vanilla bean
  • Brown sugar

Put the milk into a heavy bottom pan. Open your vanilla bean and add the seeds in the milk. Bring your milk to a boil.

When it’s boiling, add your rice stirring gently. When it boils again, stir continuously until the milk has really thickened and the rice is cooked.

Once you got the texture you like, put aside and stir in as much or as little sugar as you like.

It can be eaten lukewarm or cold.
