Spinach & cheese quesadillas

Stuff it, fold it and grill it. Yes. Quesadillas are as simple as that. That makes it an easy lunch to prepare when you’re in a hurry or want something super light but tasty.

I love that the tortillas become a little bit crispy and the cheese melts and oozes out of here. And the spinach give a it a fresh taste.

The best thing is that you can make quesadillas with absolutely whatever you want. Want some meat ? Throw that in here. Same for veggies of all kind. You’re the master of your own quesadillas. Mine were simple because it was lunch time, I was hungry and my pregnancy craving at the moment is spinach. SO.

Spinach & cheese quesadillas (2 quesadillas)

  • 2 (corn or flour) tortillas
  • 2 handful baby spinach
  • Brie (or any cheese that melt easily)

Preheat your grill or your non-stick pan.

Take a tortilla, put a handful of spinach on one half of it. Add the cheese. Fold it in two, I used a toothpick to keep it in place while grilling because I went a little bit crazy on the spinach.

30 seconds on each side until the cheese melts and the tortilla is a little bit crispy.

Bam, you’re done. Magic. I know !
