Chilled cucumber soup

Once again, it is a really simple recipe that I post but considering the fact that I am eight months pregnant, I don’t want to spend 3 hours in the kitchen to have something to eat, I admit. Plus, that little girl inside of me decided that she want to go out of here early and she might come any minute now !

This recipe is more of a starter, it is really quick to prepare and perfect for hot summer/spring days. I put two garlic cloves in here and that was powerful so if you’re a little bit sensitive to that, just add one, it will be enough to taste it. And if you have some mint, throw that in here too !

If you want to make this recipe as a main course (for lunch for example), double the quantity because it is not really filling.

Chilled cucumber soup (serves 2) :

  • 1 cucumber
  • 20cl liquid cream
  • 2 garlic cloves
  • Parsley
  • Salt & Pepper

Peel your cucumber and cut it in pieces. Peel the garlic cloves and take the germ out.

Put cream, cucumber, garlic, parsley, salt and pepper in the blender. And blend ! Taste and add more seasoning if needed.

Done !
