Summery mustard and honey grilled chicken

We are living in an apartment with no terrace, no balcony, no outside. BUT we wanted to grill because you know summer is grilling season soooo yeah, we bought an electrical bbq that we can turn on INSIDE without burning the entire house. NICE. It’s this one if you’re in the same situation and interested in buying one, it is a really good bbq.

The taste has nothing to do with a REAL grill but hey, you get what you can and you try to be content about that. Back to our chicken now.

I found this recipe on the Simply Scratch blog and I remasterized it a little bit, as per usual. I love grilled chicken but sometimes it gets dry and I get mad. The advantage of the bbq we bought is that you can easily control the temp and cook your chicken as slowly or as fast as you want. No dry chicken anymore. I promise.

This is a super simple recipe, quick and summery. We are surviving a heat wave around here and I had trouble surviving the grilling part with this weather but I made it and it was worth it. I PROMISE.

Summery mustard and honey grilled chicken (serves 2) :

  • 2 chicken breasts
  • 1/4 cup mustard (wholegrain or not)
  • 1/4 cup honey
  • 1/2 tsp paprika
  • 1 dry cayenne pepper
  • 1/2 lemon
  • Salt and pepper

Mix all the ingredients (except chicken) in a bowl. Keep a big tablespoon of the marinade aside for later.

Put your chicken in a dish and cover it with marinade. Set aside in the fridge for at least an hour.

Take the meat out of the fridge at least an hour before grilling it, no cold meat on the bbq !

Cook the chicken until it is done, around 7 minutes depending on the size. Be careful not to overcook it or it’ll be dry.

When it’s done, set it aside in a dish, brush the leftover marinade and wait for 5 minutes before digging in.
