Spinach and goat cheese crumble

The sun was out this weekend but not enough to wear shorts and tank tops! So I made these crumble with spinach and goat cheese to warm us up and to fill our bellies. It is easy, delicious and it looks kinda fancy I think.

It was pretty much the longest 3-days weekend of my entire life. My daughter was glued to me due to her teething condition. Eleven months, two teeth and despite the fact that she is suffering and tearing her gums with her nails, I can’t see any other tooth coming out yet. I basically have no time to cook, so this was perfect. I served that as a starter but you can serve it as a side dish with some meat.

If you want it to be juicier, add a tomato slice at the bottom.

Spinach and goat cheese crumble (4 crumbles) :

  • 500g spinach
  • 250g goat cheese
  • 50g flour
  • 50g breadcrumbs
  • 100g butter
  • Salt and pepper

Preheat the oven at 180°C (356°F).

Cook the spinach in a pan with olive oil, season it.

In a bowl, add the flour and breadcrumbs. Cut the cold butter into cubes and add it in the bowl. With your hands, mix everything together and crumble the dough with your finger. It is done when it looks like thick sand.

Layer the spinach at the bottom of the mould, crumble goat cheese on top and cover with a good handful of crumble dough.

Bake for 30 minutes or until the crumbles are golden.
