Rustic plums and thyme galette

I bought a lot of plums (like A LOT) and when I came back home, I tasted it. DISAPPOINTMENT. Too sour to be eaten like that, so very sour. So, as I was not going to throw all of my plums, I came up with the idea that a sweet galette would do it some good.

Galettes are the answer to a lot of fruits problems : too sour, too ripe, not really delicious as is…Etc. It does not require a long prep time and it is delicious. You don’t even need a pie mold!

I put thyme in mine because I love it but feel free to use lavender, fennel or nothing at all!
You can also buy a store bought crust but this one is REALLY good and the juice of the fruits doesn’t soak it up : magic.

Rustic plums and thyme galette (serves 6) :

For the dough :

  • 250g flour
  • 125g butter
  • 50g sugar
  • 20g water
  • 1 tsp salt

For the filling :

  • 8-10 big plums
  • 40g sugar
  • 40g almond flour
  • 2 tsp thyme

In a bowl, combine flour and cubed butter and mix it with the tip of your fingers until you reach a sand like consistency.

Add sugar, water and salt. Don’t over work it! When the dough is formed, put some plastic wrap on it and let it sit in the fridge for an hour at least.

For the filling, pit the plums, put it in a bowl with 20g of sugar and thyme. Let it sit for 10 minutes.

Preheat the oven at 180°C (356°F).

Roll out the dough in a 30cm diameter circle. Put the almond flour in the middle of the dough, leave 6-8cm to fold over the edges. Put the plums, 20g of sugar on top.

Fold the edges over the plums. Bake for about 40 minutes or until the dough gets golden brown and plums are well cooked and bubbling.
