Carrots, apple and ginger soup (vegan)

Homemade soups are quite THE thing I’m doing all fall and winter long. You can put everything that is leftover in your house (even fruits) and turn it into liquid gold, I love it.

Here I made a simple carrots soup but I add apples and fresh ginger! It really adds to the sweet flavor of the soup and makes it rich and addictive.

I added flaxseeds and sunflower seeds on top to give it a little bit of crunch but this is optional! Add goat cheese or croutons if you like, yummy.

Carrots, apple and ginger soup (serves 4) :

  • 1kg carrots
  • 2 apples
  • 15g fresh ginger
  • 2 shallots
  • 1 garlic clove
  • 1l vegetable stock
  • Salt and pepper

In a big pot, add a drizzle of olive oil and sauté your shallots. Add carrots, apples, ginger and garlic cut into small pieces. Stir and cook for 5-10 minutes or until it starts smelling nicely.

Add the vegetable stock, season with salt and pepper. Cover and let that on medium high until the carrots are soft (20-30 minutes).

Blend with a hand mixer or transfer to your blender and blend until smooth.

Serve warm with toppings of your choice!
