Vegan peanut butter energy balls (no bake)

I am a heavy day-snacker, probably due to the fact that I work from home. Instead of eating handfuls of processed food this week I decided to go a little healthier with these protein packed balls that allows me to stay full for 1h or a little more before being really hungry. Perfect for a midmorning or afternoon snack.

It is so easy to do, you just mix everything together and roll it. You can keep it in the fridge up to 3 days so 12 are not THAT much you know. It is convenient to bring to work or school, really it is the dream.

Ground flaxseed sounds kinda fancy and if you don’t have it on hand but have whole flaxseed just pop 1/2 cup in the food processor and pulse until you have a fine powder. Easy peasy.

Vegan peanut butter energy balls (12 balls) :

  • 2/3 cup peanut butter (creamy)
  • 1/2 cup dark chocolate chips
  • 1 cup oats
  • 1/2 cup ground flaxseed
  • 2 tbsp agave nectar

Combine all the ingredients in a bowl. Put in a fridge to harden for 15 minutes.

Roll into 12 balls and keep refrigerated until you use it.
