Bacon and cabbage soup

A soup that doesn’t need a few hours of cooking to be delicious and comforting after a long day is definitely what I need at the moment. My toddler is constantly crying/on my lap due to bad teething pain so easy dinner for the win. I prefer soup with chunks of vegetables but you could absolutely mix it and add the bacon at the end!

This recipe is a cheap one : cabbage, carrots, potatoes, bacon are cheap produces at that time of the year. My 18 months old loved this soup (even the cabbage!).

You can batch cook this one and keep it in the fridge up to 5 days or freeze it and use it when needed. It is so good when it’s chilly and humid, perfect for those long winter nights.

Bacon and cabbage soup (serves 4-6) :

  • 1/2 cabbage
  • 4 carrots
  • 4 big potatoes
  • 2 onions
  • 200g bacon
  • 2L chicken stock
  • 1 tbsp garlic powder
  • 2 tsp thyme
  • Olive oil
  • Pepper

Peel and coarsely chop all the vegetables. Don’t go to small or it will break down during cooking. Cut bacon in small pieces.

Boil water in a big pot and put your cabbage leaves in for 2 minutes. Drain.

In a soup pot, add a little olive oil to fry onions and bacon. When it’s golden brown, add thyme, garlic and chicken stock. Mix well and make sure you scrape that caramelized goodness at the bottom of the pot.

Add carrots, potatoes and cabbage. Cover and let it cook until the potatoes are done (about 20 minutes).

Serve warm with good bread.
