3 ingredients dark chocolate truffles

I don’t really like dark chocolate. Too strong and bitter for my liking but I have friends that LOVE that so I wanted to please their tastebuds with those mini chocolate truffles. Simple and 3 ingredients.

I first did it with sour cream but the « fresh » taste of the sour cream just wasn’t good in this. Texture was absolutely perfect. I made it again with liquid cream and it is so good (if you like dark chocolate).

It is kinda cheap and doesn’t require that much time. It took me 10 minutes to roll 40 truffles, all good. Just a quick note : don’t use dark chocolate over 56% of cacao because it would be way too bitter.

3 ingredients dark chocolate truffles (40 truffes) :

  • 200g 56% dark chocolate
  • 10cl liquid cream
  • Cacao powder

Melt chocolate over a water bath.

Heat your cream until it boils. Pour it on the melted chocolate and mix until combined.

Let it cool and put in the fridge for at least 4 hours or until set.

To roll the truffles, take a small bowl and put some cacao powder in it. Take a spoon of chocolate-cream mixture, roll into the palm of your hands and roll into the cacao. Set aside and keep in the fridge for up to 5 days.
