Quick loaded nachos platter

Quick loaded nachos platter

If you like food platter to share, you’re gonna love this one! A quick’n’easy nachos platter to munch on as an appetizer or a starter. Delicious and crowd pleasing for sure.

For the cheese, I used a mix of cheddar and monterey jack but you can use one only. Or classic shredded cheese if that’s all you have on hand.

Toppings wise, you can really go classic OR crazy : add tomatoes if you want (not yet in season but our time will come), guacamole (after baking the platter). We ate it with spicy salsa and sour cream to dip our chips! So good.

Quick loaded nachos platter  (serves 4-5) :

  • 300g tortilla chips
  • 400g ground beef
  • 100g bacon
  • 1 onion
  • 50g cooked sweet corn
  • 50g cooked green peas
  • 200g nachos cheese (cheddar or monterey jack)
  • 1 tbsp cumin
  • 2 tsp ginger
  • Salt and pepper

Preheat your oven at 180°C (356°F).

Cover a baking sheet with parchment paper. Place tortillas chips on the baking sheet.

In a pan, fry your minced onion with the ground beef in a little bit of oil until the beef is cooked. Add cumin, ginger, salt and pepper.

In an other pan, dice your bacon into small cubes and fry it until extra crispy.

Spread beef, vegetables, bacon and half of the cheese on the chips making layers. Once done, add the other half of the cheese on top and bake for 10 minutes or until the cheese is fully melted.

Serve hot!
