Vegan pineapple fried rice

Lazy night dinner for the win, right? If you have a few vegetables left in your fridge that you don’t really know what to do with, here is an idea! But the real star here is fresh pineapple. I love that fruit : raw, cooked, juiced… In this recipe, you have the fresh taste of the pineapple with the slightest sourness, it is incredibly refreshing.

Fried rice is a go-to here, with a lot of chili on the side. I don’t put it directly in but I use a chili paste that my mother-in-law sends me from the Reunion Island. Close your eyes and you’re on a deserted island eating a big ol’ bowl of rice with the sound of the waves crashing on the beach… Can you tell I need vacation?

Vegan pineapple fried rice (serves 4) :

  • 400g cooked rice
  • 1/2 pineapple
  • 2 garlic cloves
  • 1 onion
  • 1 tomato
  • 4 big mushrooms
  • 15-20 greens beans
  • 1 tbsp thyme
  • 3 tbsp soy sauce
  • Coriander (optional)
  • Vegetable oil
  • Salt and pepper

Cut all vegetables to your desired sizes. Chop onion and garlic cloves finely.

In a wok (or deep pan), put a little bit of oil. Fry your onion until it starts browning. Add garlic, thyme and season well. Let it cook 2 minutes, stirring so it won’t burn.

Then, add mushrooms and green beans. Stir and cook 2 more minutes. Add tomato, stir and cover. Let the tomato melt for 5 minutes.

Add soy sauce. Add rice and mix until well combined. Don’t stop stirring. Adjust seasoning if necessary.

Just before serving, add pineapple and its juice, stir and cook for 2 minutes. Add coriander to decorate if desired.

Eat hot with a lot of chili!
