You certainly know a gluten intolerant/allergic, maybe you are yourself. If that’s the case, millet is a good alternative. Gluten free, super versatile and delicious, you’ll love it. If you want to make that recipe gluten-free just swap wheat flour for a gluten free flour and you’re set!

Back to our pancakes. Millet makes it kinda crispy, it is not too sweet and very easy to make. Get your little hands do the mixing work (if you got kids). I added shredded apple for moisture and a little natural sugar.

It was actually my first time using millet and I was very surprised. I can’t wait to test some savory recipes to see how it turns out. Have you ever tried millet ? How do you prep it ?

Millet and apple pancakes (15 small pancakes) :

  • 1 cup millet flakes
  • 1 egg
  • 1/2 flour
  • 1/2 milk
  • 1 apple
  • 1 pinch of salt
  • 1 tbsp maple syrup or honey

Mix everything in a bow until combined.

Heat a pan with a little bit of vegetable oil. Add a tablespoon of mixture to the pan, form into pancake shape and cook for 5 minutes on each side.
