Creamy cauliflower soup

One more cozy and comforting winter meal that is very heart warming. This soup get an A+ in my book and get everyone in the family (even the 2 YO) to eat the dreaded cauliflower.

There is nothing better than a gigantic bowl of soup after a cold day like we have at the moment. Plus, it cooks on its own until it is ready to get blended. Even better! Sanity keeper.

What are your favorite soups in your house? We love carrot soup, brocoli+potaotes and country style soups with big chunks of whatever veggies we have in the fridge.

Creamy cauliflower soup (serves 6) :

  • 1 cauliflower
  • 2 potatoes
  • 1 onion
  • 1 bouillon cube
  • 1 clove of garlic
  • 2 tbsp cream or yogurt
  • Salt and pepper

Chop your cauliflower. Peel and cut the potatoes. Mince the onion and sauté it in a big pot with a little bit of olive oil.

Add minced garlic. Fry for a minute, add the bouillon cube, potatoes and cauliflower. Add a liter of water. Season to taste and cook until everything is tender.

Blend, add cream or yogurt, stir and serve very hot.
