Reunion Island style banana cake

I was on dessert duty last week for a friends gathering. They made chicken curry so I decided to stay in the Island food them and went for this delicious Reunion Island style banana cake. My Reunion Island born and raised husband approved, phew.

This cake is absolutely scrumptious : sweet, moist with a little taste of rhum. You really can’t beat that. I won’t say that it is light because, let’s be honest, Reunion Island food is never light. But a small slice after dinner with a little bit of ice cream and it is perfect.

Now, can we talk about my almost-three-yo’s gathered flowers bouquet. Weeds and flowers I know but cute as a button. I had to use it for my shoot. Thanks Spring for such an uplifted mood!

Reunion Island style banana cake (serves 8) :

  • 4 eggs
  • 4 overripe bananas
  • 150g butter
  • 200g brown sugar
  • 250g flour
  • 1 pack baking powder
  • 1 tbsp white rhum

Preheat the oven at 150°C/320°F.

Melt the butter and add it into a big bowl, add sugar and mix well.

Add eggs and whisk. Pour slowly the flour while mixing thoroughly. Add baking powder and rhum, give a good mix.

The batter should be pretty thick.

With a fork, mash the bananas until its pureed and add into the batter. Mix.

Pour into a greased cake pan.

Bake for 35-45 minutes, depends on your oven. It must be golden and very moist inside.

Eat warm and cold!
