Homemade chocolate and peanuts granola bars

Afternoon snacks are not only for kids in the household! Mama’s working hard and need some fuel comes 4pm. A big cup of tea and a little snack. It is so easy to grab store bought granola bars or cookies from a drawer but I always try to do a homemade treat. Here I made some delicious peanut and chocolate granola bars.

Homemade chocolate and peanuts granola bars (12 bars) :

  • 180g rolled oats
  • 100g peanuts
  • 20g sesame seeds
  • 160g dark chocolate
  • 80ml (1/3 cup) honey
  • 85g butter
  • 80g brown sugar
  • 1 pinch of salt

Heat a pan with no added fat, lightly toast the rolled oats for a few minutes. Be careful, it burns quick! Transfer into a large bowl and let it cool.

In a small sauce pan, add the honey, sugar, butter and salt. Heat and stir until the butter is melted and the sugar is dissolved.

Turn off the heat, set it aside.

Add the sesame seeds and peanuts to the oats. Pour the honey syrup over the oats and mix with a wooden spoon until fully covered.

Let it cool for about 10 minutes.

Meanwhile, chop the chocolate in chunks (or use chocolate chips).

Cover a big square pan with parchment paper.

Add the chocolate to the oats, mix well to combine.

Pour it in the parchment paper covered pan, press it firmly with your hands to have a smooth and uniform surface.

Refrigerate for at least 2 hours.

Take the pan out of the fridge, lift the parchment paper to get the cereal bar out of the pan. Cut it in bars.

Enjoy! And keep it in the fridge until it’s all gone.
