Fall wheat salad with feta cheese and roasted sweet potatoes

Fall salad where you mix raw ingredients, roasted ones, cheeses and a sweet and sour sauce : my kind of salad. This one is really perfect, filling, full of textures and flavors.

My husband HATES wheat in this form but he did say that the salad was super delicious so I guess it is a really good one! With all the textures, you can taste the wheat but it is not overpowering. The dressing with cider vinegar is the perfect match to those ingredients, I think you’ll love it.

Fall wheat salad with feta cheese and roasted sweet potatoes (serves 2-3) :

For the salad :

  • 200g wheat
  • 100g bacon bits
  • 50g lambs lettuce
  • 50g spinaches
  • 100g feta cheese
  • 200g sweet potatoes

For the dressing :

  • 6 tbsp vegetable oil
  • 2 tbsp cider vinegar
  • 1 tsp honey
  • 1 tbsp lemon juice
  • Salt and pepper

Cook the wheat according to the package instruction. Drain, set aside to cool.

Meanwhile, preheat the oven at 180°C/350°F. Peel and cube the sweet potatoes.

On a baking sheet covered with parchment paper, add the cubed sweet potatoes and a drizzle of olive oil. Mix until every cube is covered with oil. Bake for 15-20 minutes until soft and a little browned.

Fry the bacon bits in a pan. Set aside.

Faites frire les lardons dans une poêle. Laissez refroidir.

Rince and drain the greens. Cube the feta cheese.

To assemble, put a handful of lamb’s lettuce and spinach in a plate. Top with wheat, feta cheese, roasted sweet potatoes and bacon bits.

For the dressing, mix all ingredients together until well combined.

Drizzle on the salad and enjoy your fall salad!
