Pear almond tart

Last week I posted a how-to make your own powdered almond. Here is what I did with mine ; a delicious pear almond tart. Deliciously generous and so satisfying. I love this dessert…

I used fresh pears because it is in season and they’re delicious at the moment but you could definitely use canned pears if that is what you have on hands! With a hot cup of tea, it makes for a real comforting snack/dessert.

Pear almond tart (serves 6-8) :

  • 1 short crust pastry
  • 100g powdered almond
  • 100g butter
  • 2 eggs
  • 20g flour
  • 100g sugar
  • 2 pears

Preheat the oven at 180°C/350°F.

With a whisk or a hand mixer, mix the softened butter and sugar together.

Add the eggs, flour and powdered almond. Mix well.

Put the pastry in a tart dish and poke it with a fork.

Pour the almond mixture in.

Slice finely the halved and peeled pears. Add it on top of the tart.

Bake for 20 minutes à 180°C/350°F then lower the temp to 150°C/300°F for 5-10 minutes so it won’t burn on top.

Let it cool before cutting and serving.
