Chia seeds strawberry jam

This jam has been a game changer in our household. My husband HATES jam because it is too sweet for him (and it is, sweet) but this one he devoured! I only made two small jars to try it out and in a couple of days it was almost gone.

You could do that with basically whatever frozen berries you have on hands but it won’t work as well with fresh fruits as it is not as « wet » as frozen ones. I had some strawberries hanging in the freezer so strawberry jam it is!

You get the delicious consistency of jam without the amount of sugar. In a yogurt or on a toast, it is pure heaven.

Chia seeds strawberry jam (2 small jars)

  • 500g (2 cups) frozen strawberries
  • 2 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1 tbsp honey or maple syrup (optional)

Add the frozen strawberries to a pot on low heat.

As it defrost, mash it well with a fork until pureed while it heats.

When the strawberries are well pureed, turn off the heat.

Add the chia seeds and lemon. Mix well.

Let it sit at room temperature for 30 minutes to allow the chia seeds to gel.

After that time, add the sweetener if used, mix well and pour into jars.

Store in the fridge for up to a week.
