Baked feta with tomatoes and olives

Do you have a potluck coming? I got you covered : heartwarming, delicious and rather light. Put this dish in the center of the table and watch everyone making their toasts with cheese, olives and tomatoes. So good.

It is better when served hot so serve immediately after baking for a soft and gooey feta. When it cools down, it gets firmer so it will still be delicious but harder to spread.

Baked feta with tomatoes and olives:

  • 200g feta cheese block
  • 1 handful green olives
  • 1 handful black olives
  • 1 handful cherry tomatoes
  • 3 sprigs of thyme
  • 1/2 lemon
  • Olive oil
  • Pepper

Preheat the oven at 200°C/400°F.

Drain the feta cheese and olives.

In a baking dish, add the feta. Add olives, tomatoes and thyme around it.

Squeeze the lemon on top of everything and drizzle with a generous glug of olive oil.

Crack some pepper on the feta.

Cover with foil and bake for 15 minutes.

Take the foil off and cook 5 more minutes.

Serve immediately with toasted ciabatta bread!
