Pomegranate and pistachios pearl pasta salad

A pasta salad that does not contain mayonnaise because I am so tired of mayo pasta salad y’all! I added pistachios and pomegranate for some crunch and freshness. AND a lot of herbs, like a lot. Serve it as a side for your grilling part and it’s perfect.

Pomegranate and pistachios pearl pasta salad (serves 4) :

  • 200g berkoukes (pearl pasta)
  • 1 liter of water
  • 1 tbsp olive oil
  • About 20 shelled pistachios
  • 1/2 pomegranate
  • 1 handful coriander
  • 1 handful parsley
  • A dozen mint leaves
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper

Cook the pasta in a liter of water with a tablespoon of olive oil for 15 minutes, pasta must be tender. Drain if needed and let it cool.

Chop the coriander, parsley and mint leaves finely.

Seed the pomegranate and chop the pistachios.

In a big bowl, add the pasta, herbs, pomegranate and pistachios.

Add 4 tbsp of olive oil, lemon juice and season generously. Mix.

Serve!
