Mojito strawberry galette

Why mojito? Well, this wasn’t intended to taste like a mojito but when I took a bite I was like.. Wait? WHAT? It’s like eating a strawberry mojito! No alcohol though but still all the other ingredients are there.

It is such a pretty galette, you’ll eat it in a pinch. Strawberries get all jammy inside and make it a moist and light dessert. For the homemade dough, please see the recipe here. I just loved it so much.

Mojito strawberry galette

  • 1 homemade dough
  • 400g strawberries
  • 1/2 tbsp cornstarch
  • 10 mint leaves
  • 1/2 lime (juice and zest)
  • 50g brown sugar
  • 1 egg

Preheat the oven at 150°C/300°F.

Quarter the strawberries.

Add the strawberries in a bowl with cornstarch, lime juice and brown sugar.

Chop the mint finely and zest the lime.

Add it to the bowl and mix with a spatula.

Roll the dough.

Spread the strawberry mix on top on the dough leaving 5cm on the sides to fold the dough over.

Fold the dough over the strawberries.

Refrigerate the galette 15 minutes before baking.

Brush the dough with a whisked egg.

Bake for 30-40 minutes, keep an eye on it.

Let it cool a bit and serve!
