Figs & goat cheese salad

A very pretty Fall salad that is dreamy with its very bright red figs! I discovered I liked figs very late in my life because I never ate a fig before the age of... 20 I think! I do not like dried figs but fresh ones are so different?? A burst of freshness when you bite into it and so so tender and sweet.

With a little bit of cheese, some crunchiness with seeds and pomegranate, it's very balanced salad. The sauce gives it a nice acidity, too. This is high standard salad if you ask me.

Figs & goat cheese salad (serves 2) :

  • 200g arugula
  • 6 figs
  • 100g fresh goat cheese
  • 2 tbsp pumpkin seeds
  • 1/2 pomegranate

For the sauce :

  • 6 tbsp oil
  • 2 tbsp lemon juice
  • 10 parsley leaves
  • 1/2 garlic clove
  • Salt

Put all the ingredient for the sauce in a blender or food processor and mix until you get a smooth dressing.

Layer a bed of greens in two separate bowls.

Quarter the figs and add on top of the greens.

Crumble goat cheese on top.

Add pumpkin seeds and pomegranate.

Drizzle with sauce and serve!
