Cheesy butternut gratin

A very cool alternative to the traditional tartiflette, a frenchy cheesy potato casserole. You just replace the potatoes with butternut squash here. Of course, it's sweeter than a regular one but it's quite light and very delicious!

With a side of greens, it does the job for a nice cozy dinner. You could use other squash but I've found butternut gives the best result in this dish!

Cheesy butternut gratin (serves 4 to 6) :

  • 1 butternut squash
  • 1 reblochon cheese
  • 200g bacon bits
  • 1 onion
  • 4 tbsp sour cream
  • 1 garlic clove
  • Pepper

Peel the butternut and slice it thinly.

Cut the reblochon in half. Then cut it again widthwise so you get 4 equal pieces.

Mince onion.

Fry the onion and bacon in a pan.

Prep the sour cream by adding grated garlic and pepper to it.

Preheat the oven at 180°C/350°F.

In an oven safe dish, put a big layer of butternut.

Add onion and bacon bits.

Add half of the cream and spread it. Then add two pieces of cheese crust side up.

Add the rest of the butternut squash then the rest of cream.

Finish by adding the 2 remaining pieces of cheese on top.

Bake for 30-40 minutes or until the cheese is golden and the squash soft.

Serve!
