Radish tops soups

Don't know what to do with your radish greens? Just keep it and make soup with it, zero waste style! Few ingredients, ready in 15-20 minutes, happiness in a bowl I'd say.

Radish tops kinda taste peppery like arugula. Add a little sour cream to make it even better. It is so good, you gotta try it if you never did.

Radish tops soups (serves 2) :

  • 1 bunch of radish tops
  • 2 small potatoes
  • 2 garlic cloves
  • 1 onion
  • 1 cube of veggie bouillon
  • 2 tbsp of sour cream
  • Salt and pepper

Wash radish tops vigorously under tap water.

Peel and chop the onion.

Peel garlic cloves.

Peel and chop potatoes.

In a pot, add garlic, onion, potatoes, radish top and cube of bouillon. Add salt and pepper.

Cover with water.

Let it simmer on medium for 15-20 minutes, potatoes must be tender.

Blend until smooth in a blender or immersion blender.

Add sour cream and mix well.

Serve!
