Burrata, bacon and peas spaghetti

Here is yet another easy and quick dinner idea, 20 minutes start to finish, perfect for a weeknight treat. Al dente pasta with crispy bacon bits, peas and a truffled burrata for an extra fancy feel. It's perfect!

It's so easy to adapt to what you have too, you could add spinach, nuts, different herbs, spices... Whatever is hanging around in your fridge, throw it in there. I love this recipe and couldn't recommend it enough!

Burrata, bacon and peas spaghetti (serves 2-3) :

  • 250g uncooked spaghetti
  • 100g peas
  • 100g smoked bacon
  • 10cl beef stock
  • 1 garlic clove
  • 1 tbsp chopped parsley
  • 1 burrata (truffled here)
  • Salt and pepper

Cook the pasta in a big pot of water and keep 2 tbsp of cooking water. Drain, rinse and set aside.

In a shallow pan, fry bacon with the minced garlic clove.

When the bacon starts to crisp up, add peas and parsley. Season with salt and pepper.

Add beef stock and pasta cooking water. Mix and let it simmer for 2-3 minutes.

Add the drained pasta to the pan, mix until the pasta are coated in the sauce, peas and bacon.  

Plate and add burrata on top!
