Reblochon, potato and bacon pizza

We're big fans of pizza around here, we eat it quite often. This is my daughter 's favorite toppings, she asked for it and I happily obliged. I mean, why would I not? Look at that cheese. Reblochon is a french cheese, we'd usually put it in gratin but it's delicious on pizza. Bacon, potaotes, what could go wrong here?

Look at that cheesy crust, so beautiful. And these potatoes really make this pizza perfect.

Reblochon, potato and bacon pizza (makes 2) :

  • 2 pizza dough
  • 1/2 reblochon cheese
  • 1 onion
  • 100g bacon bits
  • 3 small potatoes
  • 1 ball of mozzarella di buffala
  • 2 handfuls shredded mozzarella
  • 2 tbsp sour cream
  • Parsley

Slice the potatoes thinly, using a mandolin if possible.

Put the potato slices in a pot with cold water.

Bring it to a boil and cook for 7-10 minutes, drain and set aside.

Preheat the oven at 250°C/480°F.

Fry the bacon bits in a pan.

Roll out the pizza dough.

Spread a tbsp of sour cream on the dough, add a handful of shredded mozzarella.

Add half of the minced onion, half of the mozzarella di buffala torn in small pieces.

Add potatoas, half the bacon and half the sliced reblochon.

Bake for 12 minutes.

Garnish with parsley.

Repeat for the second dough.
