Penne and shrimp in spicy tomato sauce

After the coldwave we've had this weekend, I'm more than ready for some spicy tomato sauce. With pasta and shrimps it's so so good. The sauce is simmered with herbs, you poach the shrimps in it and then mix the pasta. It's scrumptious !

You can always adjust the level of heat, with more or less chili. It's good if it tickles your tastebuds a little bit. Keeps you warm !  

I used prisma penne because their shape is so pretty but spaghetti or cappellini would be just as good. As long as the sauce coats the pasta, you're good to go.

Penne and shrimp in spicy tomato sauce (serves 4) :

  • 300-400g shrimps
  • 400g penne prisma
  • 1 onion
  • 2 garlic cloves
  • 30cl tomato sauce
  • 1/2 bird's eye chili
  • 1/2 tsp oregano
  • 1/4 tsp rosemary
  • 1 bay leaf
  • 1 tbsp fresh parsley
  • Olive oil
  • Salt and pepper

Cook the pasta according to the package instruction for an al dente pasta.

Mince the onion and grate the garlic.

In a sauce pan, heat some olive oil and add the onion and garlic.  

Add the tomato sauce, oregano, rosemary and bay leaf. Season with salt and pepper.

Mince the chili and add it to the pan. Take out the seeds if you don't like spicy food.

Cover and let it simmer on low heat for 30 minutes.

Meanwhile, peel the shrimps and cut the top with a knife to remove the intestine.

When the sauce is ready, add the shrimp and poach them in the sauce for 5 minutes and add the pasta. Stir well.

Sprinkle with fresh parsley and serve !
