Creamiest butternut squash soup
Cold winter nights are perfect for creamy soups and cozy meals. I was given a huge butternut and I used it to make this delicious creamy butternut soup.
When I prepare a soup, I make a huge batch so we can eat it for several days. It saves time, electricity and allows me to enjoy this delicious soup for longer. Winner.
I really like the creamy taste of the butternut but you could use whatever squash you have on hands. I like to add toppings for more fun : sour cream, goat cheese, nuts or seeds… Yummy.
Creamiest butternut squash soup (serves 6) :
- 1kg butternut squash
- 4 small potatoes
- 1 onion
- 1 cube of vegetable stock
- 2 garlic cloves
- Salt and pepper
- Sour cream (optional)
Peel and chop your vegetables.
In a big pot, add a little bit of vegetable oil and fry your vegetables until golden. Add the cube of stock and about a liter of water.
Let it cook until the vegetables are tender.
Mix with a hand mixer or blender until creamy.
Serve topped with a little bit of sour cream!
