Winter style guacamole

When it’s cold in Europe, it’s hot in the countries we import our avocados from. Meaning avocados are perfectly delicious and ripe in winter. Even though, you might enjoy guacamole on a sunny beach in the middle of summer, you can also have great fun eating it while it’s freezing cold outside.

Tomatoes during Winter is a big no-no to me. No flavor, no good textures… Ew. So I replaced the tomatoes with pomegranate seeds. It is deliciously sweet and tangy, I really enjoy it. And it goes really well with guacamole if you ask me. However, I did not have any fresh chili on hand so I skipped that but if you like it, put it all in! Fresh chili or jalapeños sounds pretty good.

I serve it with tortilla chips and if there is any leftovers (not often) it makes a killer sandwich the next day, trust me on that. You can also add it on chili con carne, soup… It goes well with almost everything!

Winter style guacamole (serves 2) :

  • 1 very ripe avocado
  • 1/4 onion
  • 1 tsp cumin powder
  • 1 handful pomegranate seeds
  • 1/2 lime
  • Salt

In a bowl, mash your avocado with a fork until chunky but mashed. Add the lime juice, salt, cumin, very finely chopped onion and mixed until combined.

Add the pomegranate seeds and mix delicately.

Serve right away or store in the fridge (for a day max) !
