Spinach and goat cheese quiche
My love for quiche is undeniable. I make it very often in various shapes, with a lot of different ingredients. Leftovers veggies, veggies my 2yo doesn’t really like usually, cheeses that are drying out in the fridge…
This one turned out really moist and tasty! I mean… Spinaches and goat cheese is always a delicious combo. The fact that is has cheese kinda balances the spinaches for kids usually, even though my little girl just love spinach.
What is your favorite quiche ever? I love doing bacon-mushroom too! I also make a lot of lorraine quiche (google it, it’s amazing), I serve that with a salad and dinner is done.
Spinach and goat cheese quiche (serves 6):
- 1 short pastry dough
- 300g fresh spinaches
- 1 shallot
- 1 log style goat cheese
- 4 eggs
- 2 tbsp sour cream
- 2 tbsp milk
- 1 big handful shredded cheese
- Salt and pepper
Preheat the oven at 180°C (350°F).
Wash the spinaches and drain it well. Wilt in a pan with a little bit of olive oil. When wilted, drain well.
Slice the goat cheese log.
Finely slice the shallot.
In a bowl, combine eggs, sour cream, milk, cheese and season. Mix well.
Put the dough in a baking pie dish and poke holes in it with a fork.
Put the cooked spinaches on the dough, add the shallots slices. Top with goat cheese. Cover with the batter. It doesn’t need to cover the cheese entirely.
Bake for 20 minutes or until golden brown.
