Oven baked fries and avocado mayo

For lunch, I love doing oven baked fries if I have a little extra time. I also like to change the ever-boring (for me) and greasy mayonnaise my daughter loves so much. I decided I’d do a sauce that is the same texture as mayo but with avocado for healthy fats!

It was a hit, she loved it! The sauce is thick, a little tangy and very creamy. It is a good alternative to the store bought sauce and it’s ready in literally 2 minutes. I don’t fry at home so oven baked fries need to be CRISPY and delicious, it’s important.

Oven baked fries and avocado mayo (serves 2) :
- 6 medium potatoes
- 1 avocado
- 1/2 tsp dijon mustard
- 1 tsp lemon juice
- 1 small garlic clove
- 2 tbsp vegetable oil
- Salt and pepper
Preheat the oven at 200°C/390°F.
Wash the potatoes and pat dry with a towel. Cut in fries shape.
In a bowl, add your fries, a drizzle of vegetable oil, salt and pepper. Mix until well coated.
On a baking sheet lined with parchment paper, spread the fries in an even layer. Bake for 15 minutes until golden and crispy.
Meanwhile, prep your avocado mayo. In a food processor, add chopped avocado, mustard, lemon juice, garlic, oil and season well. Mix until you get a thick and creamy sauce that ressembles mayo.
Devour!
