Colorful zucchini quiche

After a well deserved break here on the blog, I am back with a delicious zucchini quiche. A close friend gave those zucchinis to me, I’d never seen orange ones before, have you??

I turned my zucchinis into a colorful quiche to get my daughter to eat zucchini without gagging. Three year old are so fun! She ate the yellow and orange zucchinis but didn’t eat all the green ones, so I guess we won the war anyway.

It is a fun light dinner, we served it with some ham and called it a night! Zucchinis are on all market stalls these days here so I am really taking advantage of this.

Colorful zucchini quiche (serves 4-6) :

  • 1 short pastry
  • 5 eggs
  • 3 zucchinis
  • 1 handful shredded cheese
  • 2 tbsp sour cream
  • 3 tbsp milk
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • Salt and pepper

Preheat the oven at 150°C/300°F.

Put the pastry in a quiche/pie pan. Poke hole in it with a fork.

In a bowl, whisk together eggs, sour cream, milk, thyme and garlic. Add salt and pepper. When everything is combined, add shredded cheese and stir.

Wash the zucchinis and slice into even slices. Put it on the pastry alternating colors.

Pour the eggs mixture on top and bake for 20-25 minutes.

Eat warm or cooled.
