Avocado toast + foolproof soft boiled eggs

For a filling breakfast or a light lunch, avocado toast is my go-to! I love that, it is so easy to make and it just keeps me satisfied until the next meal. With a soft boiled egg on top, it is even better. Are you on team mashed or sliced? I am most definitely on team mashed! Much easier to eat in my opinion! The ratio 1/4 of an avocado on each toast is my favorite!

In the recipe below, I’m giving you all my tips for a perfect soft boiled egg every time, a firm white and a very runny yolk! I like making several at a time, I put them in the fridge after their ice bath. When I want one, I peel it, let it come to room temperature and I have a runny yolk in my egg, yummy.

Avocado toast + soft boiled eggs (2 toasts) :
- 2 pieces of bread
- 1/2 avocado
- 1 egg
- 1 tbsp lemon juice
- Chili flakes
- Salt and pepper
Fill a small pot with water and bring it to a boil.
While it heats up, mash or slice your avocado.
Add lemon juice on top.
Toast (or not) your bread.
Spread the avocado on top and sprinkle with chili flakes.
Add a little salt and a little pepper.
When the water boils, put the egg in it very softly. Cook for 6 minutes (exactly!).
Prep a bowl with cold water and ice cubes. Put the egg in the ice bath for a minute (put a timer!).
Peel it, slice it and put it on top of the avocado!
