Fluffy lemon and kefir cake

Have you ever heard of kefir? Don’t run please. It is basically fermented milk. It gives cakes, pancakes and all sorts of sweet treats a wonderful fluffiness. It tastes like yogurt but is much runnier.

So here is my cake : kefir and lemon because I love lemon! I put the zest AND the juice for more flavors. You might find that the batter is very runny (because it is) but it is normal, don’t panic. Follow the baking instructions and you’ll end up with a super fluffy cake that stores really well in an air tight container.

Fluffy lemon and kefir cake

  • 3 eggs
  • 200g flour
  • 130g (3/4 cup) sugar
  • 24cl (1 cup) kefir
  • 1 lemon
  • 10cl vegetable oil
  • 1,5 tsp baking powder

Preheat the oven at 180°C/350°F.

In a big bowl, whisk the eggs with sugar until well combined.

Add kefir, oil, 2 tbsp lemon juice and its zest. Mix well.

In a small bowl, combine the flour and baking powder. Add to the egg batter.

Mix until you get an even batter. It is runny and it is normal.

Grease your pan and pour the batter in.

Bake for 45 minutes.

Let it cool before taking it off of the pan.
