Crunchy almond granola

Crunchy almond granola because it is so delicious in yogurt! Or in milk, or on its own by the handful... I wouldn't say I did. But I might have.

It's just as sweet as it needs to be, almonds are toasted to crunchy and oats are caramelized. A big jar on Sunday and you're good for the rest of the week.

Crunchy almond granola:

  • 40g almonds (1/3 cup)
  • 20g shredded coconut (1/3 cup)
  • 135g oats (1,5 cup)
  • 100g honey (1/4 cup + 2 tbsp)
  • 50g brown sugar (1/4 cup)
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 pinch of salt

Preheat the oven at 150°C/300°F.

In a big bowl, mix the sugar, honey, vanilla and salt.

Add the chopped almonds, coconut and oats.

Mix with a spatula until everything is sticky and well coated.

Transfer to a parchment paper covered baking tray, spread evenly.

Bake for 20 minutes, giving it a stir every 8 minutes.

Be careful, it burns quickly, you want to keep an eye on it.
