A lovely summery recipe of herby yogurt sauce covered salmon. This recipe is simple and delicious, you can add herbs you like to fit your taste. With rice and asparagus, this meal was fantastic. Keep the leftover sauce to pour on the rice… SO GOOD.
Herby yogurt sauce baked salmon (serves 4)
- 300g greek yogurt
- 500g salmon
- 1 handful parsley
- 7-9 basil leaves
- 20ish chives stalks
- 1 lemon
- 1 garlic clove
Preheat the oven at 200°C/400°F.
Add the salmon in a lightly oiled baking dish.
Chop finely each herb, grate the garlic clove and mix in delicately in the yogurt. Add lemon juice to yogurt and season.
Slather a thick layer of yogurt on top of the salmon. Keep the rest of the sauce to serve.
Bake for 12 minutes.
Serve with rice and asparagus!
