Here is a quick and very good looking dessert (or snack). Lemon curd adds all the necessary sugar so no need to sweeten the yogurt beforehand. The almond granola is perfect for this, it is crunchy with big bits of almonds for good textures!
Lemon curd parfaits (serves 6) :
- 300g greek yogurt
- a few handfuls of crunchy almond granola
- 2 eggs
- 50g butter
- 75g sugar
- Zest and juice of a lemon
For the lemon curd :
Bring a large pot of water to a boil.
In a heat resistant bowl or a smaller pot, add eggs, butter, sugar, zests and juice of lemon.
Put the bowl on top of the pot of boiling water to create a waterbath. Mix continuously for 15-20 minutes, the lemon curd will thicken and look like thick custard.
With a blender, mix the cream to smooth it.
Cover with plastic wrap and let it cool.
Once cooled, pour the curd into a piping bag.
Pour l’assemblage :
Prep your glasses.
Put a generous layer of crunchy almond granola at the bottom of each glass.
Add some yogurt then pipe a generous layer of lemon curd with the piping bag. Put yogurt on top and garnish with a little bit more granola.
Serve quickly to avoid granola from getting soft.
