Nothing like a beets salad to keep me going in my Fall spirit! With cumin seeds that have been toasted for a depth a flavor that doesn’t overpower the other ingredients.
I made a poll on Instagram and it turns out a lot of people don’t like beetroots! Well, sorry people, not me, I’ve been loving it since I was a kid. Raw or cooked, always a delight. Do you like beets? How?
Cumin seeds beets salad (serves 3-4)
- 500g cooked beets
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp cumin seeds
- 1/2 red onion
- 1 handful parsley leaves
- 1 handful coriander leaves
- Salt and pepper
Cube the beets. Add it to a big bowl.
Chop the herbs finely and add it to the bowl.
Mince the red onion very finely. Add it to the bowl with lemon juice and oil. Season with salt and pepper.
In a small pan, toast the cumin seeds for 2 minutes on medium heat stirring regularly.
Add the seeds to a grinder or mortar and ground it into fine powder.
Add the cumin powder to the beets.
Mix well and keep in the fridge until ready to serve.
