Chicken fajitas

Such a cozy and family meal to make and eat! It is fun for everyone, you stuff your tortillas with whatever toppings you want. We went for : avocado, hot sauce, fresh tomatoes, cilantro and sour cream!

I know this isn’t very traditional (I guess?) but it is very very good. It is ready in 15 minutes and we can also eat it over rice, perfect!

Chicken fajitas (serves 4) :

  • 500g chicken cut into strips
  • 3 bell peppers
  • 3 garlic cloves
  • 1 onion
  • 2 tsp grated ginger
  • 1 tsp ground cumin
  • 300g tomatoes
  • Salt and pepper
  • 1 tbsp oil

Slice the bell peppers thinly.

Slice the onion and mince the garlic cloves.

Chop the tomatoes in small cubes.

Heat the oil in a pan.

Add the chicken strips and cook for a few minutes.

Add onion, garlic and ginger. Fry for 2 minutes.

Add bell peppers, tomatoes, cumin and season well. Let it cook for about 10 minutes stirring occasionally until the chicken is done and bell peppers are tenders.

Stuff it in a tortilla with some avocado and enjoy!
