Fudgy butternut squash chocolate cake
I had this huge butternut squash that needed to be used and... I love butternut in spiced cake, it makes it super moist and fluffy. Tried adding it to a delicious but simple recipe of fudgy chocolate cake. A big win : moist, fluffy and a strong cocoa taste. Add more sugar if you like your cakes sweeter! Cacao is a bit bitter but with the butternut it's well balanced out, I love it.
Fudgy butternut squash chocolate cake :
- 250g steamed butternut squash
- 50g plain thick yogurt
- 50g honey
- 100g sugar
- 2 egg whites + 1 yolk
- 50g flour
- 30g cacao powder
- 1 tsp baking powder
Preheat the oven at 180°C/350°F.
In a blender, add yogurt, butternut, honey and egg yolk. Blend until smooth.
Beat the egg whites with a pinch of salt in a big bowl until soft peaks form.
In a big bowl, add flour, cacao powder, baking powder and sugar. Mix.
Add the butternut/yogurt purée to the flour bowl and mix until fully incorporated.
Add the egg whites in, folding them in delicately with a spatula.
Add parchment paper to a round baking dish. Pour the batter.
Bake for 20 minutes at 180°C/350°F.
Let it cool completely before slicing.
