Roasted sweet potato hummus
Ladies and gentlemen, here is the best hummus I've ever ever made in my entire life. I ate a similar one at an israeli restaurant a little while ago and wanted to recreate it at home. So here is a deliciously creamy roasted sweet potato hummus.
It's slighlty sweet, very well balanced ! I made some oven crunchy chickpeas to put on top and added a dusting of smoked paprika, so so good.
Roasted sweet potato hummus :
- 170g (1 cup) cooked chickpeas
- 150g (1/2 cup + 2 tbsp) cooked sweet potato
- 2 tbsp tahini
- 2 tbsp olive oil
- 1 tsp lemon juice
- 1 small garlic clove
- 2 tbsp cold water
- Salt
Preheat the oven at 180°C/350°F.
Poke the sweet potato a few times with a fork.
Roast it in the oven for 25-30 minutes until it's fully cooked and tender.
Take the skin off the sweet potato and scoop 150g of the flesh.
Add all the ingredients in a blender or food processor and mix until you get a smooth hummus.
Serve with a drizzle of olive oil and a few sesame seeds.
